Made a resolution to start making more of your own bread? Then this brilliant class led by our favourite master bread-maker, Andrew from differentbreid, is just for you. He’ll break it down to the basics; selecting the right flour, the chemistry of bread making, kneading, proving and baking techniques. With the best first step baking course around, Andrew will make sure you can’t go wrong. Collect your own homemade and freshly baked bread the next morning.
Using the best seasonal produce to create dishes that celebrate the bounty of summer. The endless sunshine and long balmy days of a Scottish summer inspires a lighter approach to cooking, where you will learn useful kitchen skills and techniques as well as plenty of informed ideas for effortless and stylish al fresco eating.
Demonstrates the basics of fish and shellfish cookery giving tips and clues to buying the freshest and most sustainable Scottish seafood around. The class will equip you with the know-how to confidently prepare and cook a range of simple and delicious dishes. We know how important it is to be thrifty too, and we encourage it, with particular attention to the less commonly used, and therefore cheaper, although no less delicious varieties.
We should all be eating more fresh fruit and vegetables. Come and learn some wonderfully diverse, seasonal and, above all, tasty dishes that don't require meat. This class will leave you brimming with ideas and an increased repertoire to reinvigorate your palate and pocket.
Now that summer's over, we can concentrate on the culinary delights of Autumn. ‘The season of mists and mellow fruitfulness’ brings with it an abundance of produce that would inspire any kitchen. Come and learn about what’s best for eating right now; Game, wild mushrooms, orchard fruits and root vegetables and we’ll give you loads of recipes, tips and lipsmacking sample dishes.
We will demystify pastries, custards and baking, giving you lots of tips and tricks to make easy desserts with wow factor. Once you understand the fundamentals it becomes easier to improvise and tweak any recipe and still get scrumptious results.
Cuisine bourgeois represents the best of French provincial home cooking – as you might also find in a small bistro. This cooking is not artless, but relies on great ingredients, sensitively combined with an easy to learn technical understanding. The highly adaptable and comforting dishes you learn include vegetable gratins, terrines, legumes, stews and roasts.

As Winter sets in, come and learn about how to create delicious comforting meals that rely on long and gentle cooking. Cheaper cuts of meat can be transformed into tender and yielding stews and roasts. Root vegetables become sensual, sweet and golden. A selection of soulful dishes with soothing textures and depth of flavour that might take a while to cook but are easy and quick to prepare: for when you’re in one of those moods.
We will cover the spectrum from large joints of meat to small game birds. By following some basic principles you will always be able to create a crispy and caramelised exterior with a meltingly succulent interior. All served with the perfect roast potatoes, of course.

We like these classes to be pretty hands on so you’ll leave with the comfort and knowledge to recreate these recipes at home. We keep classes small (between 6-8) so that everyone can get involved. All classes are suitable for complete novices, but also great for culinary masters wanting to hone their skills and show off some new creations. Classes are informal and relaxed, with tastings and questions throughout as we believe the best cooking is produced over a bottle of wine and good discussion!
